Tweak a Week #5 - LEEKS

Potato, Leek & Spinach Soup

  • 3 large Leeks sliced (* Tips for Cleaning below)

  • 1 pound new or small potatoes, halved and thinly sliced

  • 4 cups reduced-sodium chicken broth (I prefer Chicken Bone Broth)

  • 8 ounces spinach, stemmed and chopped (Chard is nice here too!)

  • 1 bunch scallions, sliced

  • 1 Cup sliced Carrots

  • 1 15-ounce can cannellini beans, rinsed

  • ½ cup chopped fresh herbs, such as dill, chives and/or parsley

Tip: To clean Leeks:

 

  • Cut off the dark green part. Slice off the leek's dark green end, trimming to the part where the color is a pale green. ...

  • Cut off the end; slice stalk the lengthwise. ...

  • Run leeks under water or chop. ...

  • Swish in water and strain
